Ingredients:
- 9 whole wheat lasagna noodles
- 2 cups marinara sauce
- 1 cup low-fat ricotta cheese
- 1 cup diced zucchini
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1/2 tsp dried oregano
- Salt and pepper to taste
Directions:
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add garlic, zucchini, bell peppers, mushrooms, and spinach. Sauté until the vegetables are tender. Season with oregano, salt, and pepper.
- In a mixing bowl, combine ricotta cheese with half of the marinara sauce.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles on top.
- Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
- Repeat the layering process with the remaining noodles, ricotta mixture, and vegetables.
- Top the lasagna with the remaining marinara sauce and sprinkle mozzarella cheese on top.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Let the lasagna cool slightly before serving.
