Healthy Veggie Lasagna

Ingredients:

  • 9 whole wheat lasagna noodles
  • 2 cups marinara sauce
  • 1 cup low-fat ricotta cheese
  • 1 cup diced zucchini
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add garlic, zucchini, bell peppers, mushrooms, and spinach. Sauté until the vegetables are tender. Season with oregano, salt, and pepper.
  4. In a mixing bowl, combine ricotta cheese with half of the marinara sauce.
  5. In a baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles on top.
  6. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables.
  7. Repeat the layering process with the remaining noodles, ricotta mixture, and vegetables.
  8. Top the lasagna with the remaining marinara sauce and sprinkle mozzarella cheese on top.
  9. Cover the baking dish with foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
  11. Let the lasagna cool slightly before serving.
