Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cans diced tomatoes
- 1 can kidney beans, drained
- 1 can black beans, drained
- 4 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Directions:
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the chopped onion, garlic, and bell pepper to the pot. Sauté until the vegetables are softened.
- Stir in the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Add the corn and cook for an additional 5 minutes.
- Serve hot, garnished with shredded cheddar cheese and fresh cilantro.
