Ingredients:
- 1 whole turkey (12-14 pounds)
- 1/2 cup unsalted butter, softened
- 2 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh sage, chopped
- 1 tablespoon garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups chicken broth
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Directions:
- Preheat the oven to 325°F (165°C).
- In a bowl, mix the softened butter, olive oil, rosemary, thyme, sage, garlic, salt, and pepper to create a herb paste.
- Pat the turkey dry with paper towels and carefully loosen the skin over the breast and thighs.
- Rub the herb paste under the skin and over the entire turkey.
- Stuff the cavity with onion, carrots, and celery.
- Place the turkey on a rack in a roasting pan and pour chicken broth into the bottom of the pan.
- Roast the turkey for approximately 13-15 minutes per pound, basting every hour with the pan juices, until the internal temperature reaches 165°F (75°C).
- Let the turkey rest for at least 30 minutes before carving.
