Herb-Crusted Slow Cooked Rack of Lamb

Ingredients:

  • 1 rack of lamb
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper to taste

Directions:

  1. Preheat the slow cooker on low heat.
  2. Season the rack of lamb with salt and pepper.
  3. In a bowl, mix together olive oil, garlic, rosemary, and thyme.
  4. Rub the herb mixture all over the lamb rack.
  5. Place the lamb rack in the slow cooker.
  6. Cover and cook on low for 4 hours.
  7. Once cooked, remove the lamb from the slow cooker and let it rest for 10 minutes.
  8. Slice and serve hot.
