Herb-Crusted Slow Cooker Pot Roast

Ingredients:

• 3 lbs beef chuck roast
• 1 onion, sliced
• 4 carrots, peeled and chopped
• 4 celery stalks, chopped
• 4 cloves garlic, minced
• 1 cup beef broth
• 2 tbsp tomato paste
• 2 tbsp olive oil
• 1 tsp dried thyme
• 1 tsp dried rosemary
• 1 tsp dried oregano
• Salt and pepper to taste

Directions:

1. Season the beef chuck roast with salt and pepper.
2. In a skillet, heat olive oil over medium-high heat and sear the roast on all sides until browned.
3. Place the sliced onion, carrots, celery, and garlic in the slow cooker.
4. Place the seared roast on top of the vegetables.
5. In a small bowl, mix beef broth, tomato paste, thyme, rosemary, and oregano. Pour the mixture over the roast.
6. Cover and cook on low for 8 hours or until the meat is tender.
7. Once done, remove the roast from the slow cooker and let it rest before slicing.
8. Serve the sliced pot roast with the vegetables and gravy from the slow cooker.
