Herbed Lyonnaise Potato Salad with Herring

Ingredients:

• 1 lb baby potatoes, halved
• 2 herring fillets, skin removed
• 1/4 cup olive oil
• 2 tbsp red wine vinegar
• 1 small red onion, thinly sliced
• 2 tbsp capers
• 1/4 cup fresh parsley, chopped
• Salt and black pepper to taste

Directions:

1. Boil the baby potatoes in a pot of salted water until fork-tender, about 10-12 minutes. Drain and let cool.
2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
3. In a large bowl, combine the cooled potatoes, sliced red onion, capers, and parsley.
4. Pour the dressing over the potato mixture and gently toss to combine.
5. Season the herring fillets with salt and pepper. Heat a pan over medium heat and cook the herring fillets for 2-3 minutes on each side until cooked through.
6. Flake the herring into bite-sized pieces and gently fold into the potato salad.
