Herbed Vinaigrette Mussels

Ingredients:

  • 2 lbs fresh mussels, cleaned and debearded
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh tarragon
  • 2 tbsp white wine vinegar
  • Salt and pepper to taste

Directions:

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Pour in the white wine and bring to a simmer.
  4. Add the cleaned mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.
  5. Meanwhile, in a small bowl, combine chopped parsley, chives, tarragon, white wine vinegar, salt, and pepper to make the herbed vinaigrette.
  6. Once the mussels have opened, remove from heat and discard any unopened mussels.
  7. Drizzle the herbed vinaigrette over the cooked mussels and gently toss to coat.
  8. Serve the mussels with crusty bread to soak up the flavorful broth.
