Ingredients:
- 2 lbs fresh mussels, cleaned and debearded
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 cup white wine
- 1/4 cup chopped fresh parsley
- 2 tbsp chopped fresh chives
- 1 tbsp chopped fresh tarragon
- 2 tbsp white wine vinegar
- Salt and pepper to taste
Directions:
- In a large pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1-2 minutes.
- Pour in the white wine and bring to a simmer.
- Add the cleaned mussels to the pot and cover with a lid. Cook for 5-7 minutes or until the mussels have opened.
- Meanwhile, in a small bowl, combine chopped parsley, chives, tarragon, white wine vinegar, salt, and pepper to make the herbed vinaigrette.
- Once the mussels have opened, remove from heat and discard any unopened mussels.
- Drizzle the herbed vinaigrette over the cooked mussels and gently toss to coat.
- Serve the mussels with crusty bread to soak up the flavorful broth.
