Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 2-3 tbsp ice water
  • 2 cups fresh cherries, pitted and halved
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp almond extract
  • 1 egg, beaten (for egg wash)
  • Powdered sugar, for dusting

Directions:

  1. In a food processor, pulse together flour, sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, and pulse until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. In a bowl, combine cherries, sugar, cornstarch, and almond extract.
  6. On a floured surface, roll out the dough and cut into circles to fit your tart molds.
  7. Fill each tart mold with the cherry mixture.
  8. Brush the edges of the tarts with egg wash.
  9. Bake for 20-25 minutes until the crust is golden brown.
  10. Let the tarts cool, then dust with powdered sugar before serving.
