- 1/4 tsp salt
- 2-3 tbsp ice water
- 2 cups fresh cherries, pitted and halved
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1/2 tsp almond extract
- 1 egg, beaten (for egg wash)
- Powdered sugar, for dusting
Directions:
- In a food processor, pulse together flour, sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, and pulse until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a bowl, combine cherries, sugar, cornstarch, and almond extract.
- On a floured surface, roll out the dough and cut into circles to fit your tart molds.
- Fill each tart mold with the cherry mixture.
- Brush the edges of the tarts with egg wash.
- Bake for 20-25 minutes until the crust is golden brown.
