Homemade Chocolate Covered Cherries

These homemade chocolate covered cherries are a true labor of love, but the result is far superior to anything you can buy in a box! Sweet, juicy cherries are coated in a creamy fondant filling, then dipped in rich, decadent chocolate. They're a classic treat that's perfect for gifting or indulging in yourself. While they require a bit of patience, the process is surprisingly simple and the reward is a truly decadent homemade confection.

Homemade Chocolate Covered Cherries

Serving Size: 36 cherries

Ingredients:

  • 2 1/2 c. powdered sugar
  • 1/4 c. butter softened
  • 1 Tbsp milk
  • 1/2 tsp almond extract
  • 2 jars 8 oz each maraschino cherries with stems , well drained
  • 1 24 oz package chocolate almond bark
  • 2 Tbsp shortening

Directions:

  1. In a large mixing bowl combine sugar, butter, milk and almond extract. Mix until combined. Knead into a large ball.
  2. Roll into 1 in. balls and flatten into a 2 in. circle. Wrap around cherries and tightly roll in hands.
  3. Place covered cherries on waxed lined baking sheet with stems pointing up.
  4. Cover loosely and refrigerate 4 hours or overnight.
  5. Melt the almond bark and shortening in microwave according to package directions.
  6. Holding on to stem, dip cherries into chocolate, set on waxed paper to harden. Store in a covered container.
  7. Refrigerate 1-2 weeks before serving.
