Homemade Chocolate Covered Cherries

These homemade chocolate covered cherries are a true labor of love, but the result is far superior to anything you can buy in a box! Sweet, juicy cherries are coated in a creamy fondant filling, then dipped in rich, decadent chocolate. They're a classic treat that's perfect for gifting or indulging in yourself. While they require a bit of patience, the process is surprisingly simple and the reward is a truly decadent homemade confection.

Ingredients:
- 2 1/2 c. powdered sugar
- 1/4 c. butter softened
- 1 Tbsp milk
- 1/2 tsp almond extract
- 2 jars 8 oz each maraschino cherries with stems , well drained
- 1 24 oz package chocolate almond bark
- 2 Tbsp shortening
Directions:
- In a large mixing bowl combine sugar, butter, milk and almond extract. Mix until combined. Knead into a large ball.
- Roll into 1 in. balls and flatten into a 2 in. circle. Wrap around cherries and tightly roll in hands.
- Place covered cherries on waxed lined baking sheet with stems pointing up.
- Cover loosely and refrigerate 4 hours or overnight.
- Melt the almond bark and shortening in microwave according to package directions.
- Holding on to stem, dip cherries into chocolate, set on waxed paper to harden. Store in a covered container.
- Refrigerate 1-2 weeks before serving.
