Ingredients:
- 1.5 lbs boneless, skinless chicken thighs, cut into chunks
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water
Directions:
- In a bowl, whisk together soy sauce, pineapple juice, ketchup, brown sugar, rice vinegar, garlic, ginger, sesame oil, and black pepper to make the marinade.
- Place chicken chunks in a resealable bag or shallow dish, pour the marinade over the chicken, and marinate in the fridge for at least 2 hours or overnight.
- Preheat the grill or air fryer to medium-high heat.
- Thread marinated chicken pieces onto the soaked skewers.
- Grill or air fry the chicken skewers for about 10-12 minutes, turning occasionally until cooked through and nicely charred.
