These Huli Huli Chicken skewers are a taste of Hawaiian paradise, featuring tender chicken marinated in a sweet and savory sauce with hints of pineapple and ginger. Perfect for a backyard BBQ or luau party!

Huli Huli Chicken Skewers

Ingredients:

  • 1.5 lbs boneless, skinless chicken thighs, cut into chunks
  • 1/2 cup soy sauce
  • 1/4 cup pineapple juice
  • 1/4 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water

Directions:

  1. In a bowl, whisk together soy sauce, pineapple juice, ketchup, brown sugar, rice vinegar, garlic, ginger, sesame oil, and black pepper to make the marinade.
  2. Place chicken chunks in a resealable bag or shallow dish, pour the marinade over the chicken, and marinate in the fridge for at least 2 hours or overnight.
  3. Preheat the grill or air fryer to medium-high heat.
  4. Thread marinated chicken pieces onto the soaked skewers.
  5. Grill or air fry the chicken skewers for about 10-12 minutes, turning occasionally until cooked through and nicely charred.
