This recipe is a quick and easy way to make a tender and flavorful brisket pot roast in your Instant Pot. The brisket is cooked to perfection in a rich broth, and the pot roast is perfect for a weeknight meal or a special occasion.

 Instant Pot Brisket Pot Roast

Ingredients:

  • 3 pounds beef brisket
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 2 garlic cloves, minced
  • 2 carrots, peeled and cut into 1-inch pieces.
  • 2 cups beef broth
  • 3 Yukon gold potatoes, cut in sixths
  • 2 cups button mushrooms, stems trimmed
  • 1 bay leaf
  • 1 teaspoon fresh thyme

Directions:

  1. Sprinkle chuck roast with salt and pepper.
  2. Turn your Instant Pot to “Sauté” mode and add the beef, turning to brown on all sides, approximately 7 minutes.
  3. Remove the chuck roast from pan and set aside.
  4. Heat the oil and add the onions, garlic, and carrots. Sauté until fragrant, about 5 minutes.
  5. Return the roast to the pot and add the beef broth, potatoes, button mushrooms, bay leaf, and fresh thyme.
  6. Press the “Pressure Cook” button and adjust time to 70 minutes.
  7. When the timer beeps, you can perform a quick release by moving the pressure release to “Venting,” or you can let the pressure release naturally.
  8. A natural pressure release can take from 5 to 30 minutes. When the pressure is fully released, the float valve will drop and the lid will unlock and open.
  9. Remove the meat and let it rest. Slice and serve with vegetables on a platter.
