Instant Pot Pumpkin Walnut Steel Cut Oats

Ingredients:

• 1 cup steel cut oats
• 2 cups water
• 1 cup pumpkin puree
• 1/2 cup chopped walnuts
• 1/4 cup maple syrup
• 1 tsp pumpkin pie spice
• 1/2 tsp vanilla extract
• Pinch of salt

Directions:

1. Add steel cut oats, water, pumpkin puree, pumpkin pie spice, vanilla extract, and salt to the Instant Pot.
2. Close the lid, set the valve to sealing position, and cook on high pressure for 10 minutes.
3. Allow natural pressure release for 10 minutes, then quick release any remaining pressure.
4. Stir in chopped walnuts and maple syrup.
5. Serve the creamy pumpkin walnut steel cut oats warm, topped with additional walnuts and a drizzle of maple syrup.
