Instant Pot Salsa Pork Chops are a quick and easy weeknight meal that's full of flavor. This recipe uses your pressure cooker to create tender, juicy pork chops that are coated in a delicious salsa verde sauce. It's a simple and satisfying dish that's perfect for busy families.

Instant Pot Salsa Pork Chops

Ingredients:

  • 6 bone-in center cut pork chops, about 1/2 inch thick
  • kosher salt and black pepper to taste
  • 3 Tablespoons olive oil
  • 1 - 24 oz jar chunky salsa

Directions:

  1. Season pork chops with salt and pepper on both sides.
  2. Add olive oil to Instant Pot and turn on sauté setting. When oil is hot, brown pork chops 1 or 2 at a time.
  3. Cook each pork chop for about 1-2 minutes per side. Work in batches until all pork chops are browned.
  4. Add half of the pork chops back to the pot. Top with half the jar of salsa. Add remaining pork chops and top with remaining salsa.
  5. Place on lid and set valve to sealing. Cook on high pressure for 2 minutes.
  6. Allow pot to depressurize naturally (this will take about 10 minutes). Check for doneness with a meat thermometer. Pork should register at least 145°F.
  7. Transfer pork chops to a platter and use slotted spoon to scoop out salsa and serve over the top of the pork chops.
