Ingredients:
- 2 lbs beef chuck, cut into cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 celery stalks, chopped
- 2 cups beef broth
- 1 bottle (12 oz) Irish stout beer
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
- In a large pot, heat olive oil over medium-high heat.
- Add the beef cubes and brown on all sides. Remove and set aside.
- Add onions and garlic to the pot, cooking until softened.
- Return beef to the pot and add carrots, celery, beef broth, Irish stout beer, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper.
