Ingredients:

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 celery stalks, chopped
  • 2 cups beef broth
  • 1 bottle (12 oz) Irish stout beer
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Directions:

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add the beef cubes and brown on all sides. Remove and set aside.
  3. Add onions and garlic to the pot, cooking until softened.
  4. Return beef to the pot and add carrots, celery, beef broth, Irish stout beer, tomato paste, Worcestershire sauce, thyme, bay leaves, salt, and pepper.
  5. Bring the stew to a boil, then reduce heat and simmer covered for 2 hours, stirring occasionally.
  6. Remove the bay leaves and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.
