Ingredients:

  • 1 lb fresh white fish fillets (such as mahi-mahi or snapper)
  • 1 cup coconut milk
  • 1 cup jasmine rice
  • 1 red bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
  2. In a pot, combine the coconut milk with 1 cup of water and a pinch of salt. Bring to a boil.
  3. Add the jasmine rice, reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and the liquid is absorbed.
  4. Season the fish fillets with salt, pepper, and lime juice. Set aside.
