Italian Sausage and Onion Pasta with Lemon Garlic Sauce

Ingredients:

• 8 oz Italian sausage, casings removed
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 lemon, juiced and zested
• 8 oz pasta of your choice
• 1/2 cup grated Parmesan cheese
• 2 tbsp olive oil
• Salt and pepper to taste
• Fresh parsley for garnish

Directions:

1. In a large skillet, heat olive oil over medium heat.
2. Add the Italian sausage and cook until browned, breaking it up into crumbles with a spoon.
3. Add the chopped onion and garlic, sauté until onion is translucent.
4. Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water.
5. Add lemon juice and zest to the sausage mixture, stir to combine.
6. Toss the cooked pasta in the skillet with the sausage mixture. Add some pasta water if needed to loosen the sauce.
7. Stir in grated Parmesan cheese, season with salt and pepper.
8. Serve hot, garnished with fresh parsley.
