Ingredients:

  • 2 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, feta cheese, and olives.
