Ingredients:
- 2 cups mixed greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 avocado, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Directions:
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, avocado, feta cheese, and olives.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
