Ingredients:

  • 2 cups cooked rice
  • 1 cup kimchi, chopped
  • 1/2 cup kimchi juice
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 green onions, chopped
  • 2 eggs
  • Salt and pepper to taste

Directions:

  1. In a bowl, mix the soy sauce, sesame oil, and kimchi juice.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Add garlic and onion, sauté until fragrant.
  4. Add chopped kimchi and cook for 2-3 minutes.
  5. Add rice to the skillet, breaking up any clumps.
  6. Pour the soy sauce mixture over the rice and mix well.
  7. Create a well in the center of the skillet and crack the eggs into it.
  8. Scramble the eggs and mix them into the rice.
  9. Add green onions, salt, and pepper, and stir to combine.
  10. Cook for an additional 2-3 minutes, stirring frequently.
  11. Serve hot and enjoy!
