Lemon Herb Chicken and Rice

Ingredients:

  • 1 lb boneless, skinless chicken breast, cut into cubes
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Directions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken cubes with salt, pepper, and paprika.
  3. Add chicken to the skillet and cook until browned on all sides, about 5 minutes.
  4. Push chicken to one side of the skillet and add minced garlic, thyme, and oregano. Cook for 1-2 minutes until fragrant.
  5. Stir in rice, chicken broth, lemon juice, and lemon zest. Bring to a simmer.
  6. Cover and reduce heat to low. Let it cook for 18-20 minutes or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork, taste and adjust seasoning if needed.
  8. Garnish with fresh parsley before serving.
