Lemon Pepper Chicken

Serving Size: 4-6 servings

Ingredients:

  • 4-6 Boneless Skinless Chicken Breasts
  • 1/2 c. Extra Virgin Olive Oil
  • 2 tbsp. Lemon Juice
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 tsp. Garlic Powder
  • 1 tsp. Thyme

Directions:

  1. Begin by butterflying the chicken breasts, cutting them in half so that they open like a book.
  2. Place the butterflied chicken breasts into a resealable bag.
  3. To the bag add the salt, pepper, garlic powder, thyme, olive oil, and lemon juice.
  4. Massage all of the ingredients into the chicken and place into the refrigerator for 30 minutes.
  5. After 30 minutes place a skillet with 2-3 tbsp of oil over a medium/high heat and allow to get hot.
  6. Once the skillet is hot add the chicken a couple pieces at a time. Cook for 4-6 minutes on the first side. Then flip and cook 4 minutes on the other.
