For The Tart Crust
Ingredients:
- 1 stick unsalted butter, melted
- 2/3 cup sugar
- 1/4 tsp salt
- 1 1/4 cup flour
Directions:
- In a medium size mixing bowl combine the melted butter, sugar, and salt.
- Add in the flour and combine well.
- In a 9" tart pan with a removable bottom, evenly spread dough along the bottom and up the sides.
- Cover with plastic wrap and place in fridge for at least 1 hour.
- Preheat oven to 375 degrees.
- Bake the tart shell for 10-15 min or until golden around the edges, let cool completely
For The Tart Filling
Ingredients:
- 12 oz cream cheese softened
- 2/3 cup sugar
- 1 cup heavy whipping cream
- 1 cup cool whip topping, room temperature
- 1 14oz can mandarin oranges, drained.
Directions:
- In a stand mixer using the paddle attachment combine the cream cheese and sugar and mix on high till light and creamy, stir in mandarin oranges.
- In another large bowl that has been chilled in the freezer for about 15 min using a hand mixer mix on high speed until stiff peaks form, fold in the whipped topping.
- Combine the whip cream mixture into the cream cheese mixture and fold gently together.
- Pour into prepared baked tart crust, Let cool in fridge for at least 3 hours.
