Mango Coconut Popsicles

Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup honey or agave nectar
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut

Directions:

  1. In a blender, combine the diced mangoes, coconut milk, honey, and vanilla extract. Blend until smooth.
  2. Stir in the shredded coconut into the mixture.
  3. Pour the mixture into popsicle molds.
  4. Insert popsicle sticks into each mold.
