Maple Glazed Sweet Potatoes

Ingredients:

• 4 medium sweet potatoes, peeled and cubed
• 3 tablespoons olive oil
• 1/4 cup maple syrup
• 1 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• Salt to taste
• Pepper to taste
• 1/2 cup chopped pecans

Directions:

1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper until evenly coated.
3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
5. Remove from the oven and sprinkle with chopped pecans before serving.
