Marinated Tempeh Stir-Fry

Ingredients:

  • 8 oz tempeh, cubed
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 tbsp vegetable oil
  • Cooked rice or quinoa, for serving
  • Sesame seeds, for garnish

Directions:

  1. In a bowl, mix soy sauce, rice vinegar, maple syrup, garlic, and ginger to make the marinade.
  2. Add tempeh cubes to the marinade and let it marinate for at least 30 minutes.
  3. In a large pan, heat vegetable oil over medium heat.
  4. Add marinated tempeh to the pan and cook until browned, about 5-7 minutes.
  5. Add sliced bell pepper and broccoli florets to the pan and stir-fry for another 5 minutes.
  6. Serve the stir-fry over cooked rice or quinoa.
  7. Garnish with sesame seeds before serving.
