Marinated Tofu Steak Sandwiches

Ingredients:

  • 14 oz firm tofu, sliced into 1-inch thick steaks
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 2 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 4 whole grain sandwich buns
  • 1 cup arugula
  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced

Directions:

  1. Press the tofu slices between paper towels to remove excess moisture.
  2. In a bowl, whisk together soy sauce, olive oil, maple syrup, garlic, smoked paprika, and black pepper.
  3. Place the tofu steaks in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.
  4. Preheat the air fryer to 375°F (190°C).
  5. Remove tofu from the marinade and place in the air fryer basket. Cook for 15 minutes, flipping halfway through.
  6. Toast the sandwich buns in the air fryer for 2-3 minutes until golden.
  7. Assemble the sandwiches by layering arugula, air-fried tofu, avocado slices, and tomato on the buns.
  8. Serve immediately and enjoy!
