Ingredients:

  • 8 oz linguine pasta
  • 1 lb white fish fillets (such as cod or tilapia)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup white wine
  • 1/2 cup fresh parsley, chopped
  • Salt and pepper to taste
  • Lemon wedges for garnish

Directions:

  1. Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
  2. Season the fish fillets with salt and pepper.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  4. Add the seasoned fish fillets to the skillet and cook for 2-3 minutes per side until cooked through. Remove the fish from the skillet and set aside.
  5. In the same skillet, add the cherry tomatoes and white wine. Cook for 5-7 minutes until the tomatoes start to soften.
  6. Return the cooked fish to the skillet, gently breaking it into chunks.
  7. Add the cooked pasta and fresh parsley to the skillet. Toss everything together until well combined.
  8. Season with additional salt and pepper if needed.
