Mediterranean Lamb Gyro with Tzatziki Sauce

Ingredients:

• 1 lb lamb meat, thinly sliced
• 1/2 red onion, thinly sliced
• 1 tomato, diced
• 1/2 cucumber, thinly sliced
• 4 pita bread rounds
• 1/2 cup plain Greek yogurt
• 1/4 cup diced cucumbers
• 2 cloves garlic, minced
• 2 tbsp lemon juice
• 1 tsp dried oregano
• Salt and pepper to taste
• 2 tbsp olive oil

Directions:

1. In a mixing bowl, combine lamb slices with olive oil, oregano, salt, and pepper. Let marinate for 30 minutes.
2. In a separate bowl, mix Greek yogurt, diced cucumbers, garlic, lemon juice, salt, and pepper to make the tzatziki sauce. Refrigerate until ready to use.
3. Heat a grill pan over medium-high heat. Cook the marinated lamb slices for 2-3 minutes per side until cooked through.
4. Warm the pita bread on the grill pan for 1 minute on each side.
5. Assemble the gyro by placing cooked lamb slices, red onion, tomatoes, and cucumbers on the pita bread. Drizzle tzatziki sauce over the toppings.
6. Fold the pita bread over the ingredients to form a wrap. Secure with toothpicks if needed.
