Ingredients:
- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions:
- Cook rotini pasta in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Add the cooled pasta to the vegetable mixture and pour the dressing over it. Toss well to combine.
- Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
