For the Mango Salsa:
Ingredients:
- 1 red onion, diced
- 1 roma tomato, diced
- 1 mango, diced
- 1/4 cup cilantro
- 2 tbsp olive
For the Pork Chops:
Ingredients:
- 4 bone-in pork chops
- 1 1/2 tsp pepper
- 1 1/2 tsp garlic powder
- 1 1/2 tsp ground cumin
- 1 tsp paprika
- 2 tbsp olive oil
Directions:
- In a medium size bowl combine the red onion, tomato, mango, cilantro, and olive oil. Refrigerate while you make the pork chops.
- Whisk together in a small bowl the pepper, garlic powder, cumin, and paprika.
- Pat the pork chops dry with a paper towel and rub the spice mix on both sides of the pork chops.
- Heat the olive oil in a large skillet on medium high heat cook pork chops for 5 minutes on one side, turn over and cook for another 5 minutes, or until internal temperature reached 145.
- Serve pork chops with the mango salsa.
