Ingredients:

  • 1 cup quinoa
  • 1 can chickpeas, drained and rinsed
  • 1 cucumber, diced

  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra-virgin olive oil

Directions:
