Mediterranean Seafood Salad

Ingredients:

  • 200g cooked shrimp, peeled and deveined
  • 200g calamari, cleaned and sliced
  • 150g mussels, cooked and shelled
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup black olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Directions:

  1. In a large bowl, combine the shrimp, calamari, and mussels.
  2. Add the cherry tomatoes, cucumber, red onion, olives, and parsley to the seafood.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the seafood and vegetable mixture, tossing gently to combine.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
