Ingredients:

4 large artichokes
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
2 cloves garlic, minced
1/4 cup olive oil
Salt and pepper to taste
Lemon wedges for serving

Directions:

Preheat the oven to 375°F (190°C).
Prepare the artichokes by cutting off the top third and removing the tough outer leaves.
In a bowl, mix breadcrumbs, Parmesan cheese, parsley, garlic, olive oil, salt, and pepper.
Carefully spread the artichoke leaves apart and stuff the breadcrumb mixture between the leaves.
Place the stuffed artichokes in a baking dish, add a little water to the dish, cover with foil, and bake for 45 minutes.
Remove the foil and bake for an additional 15 minutes until the breadcrumbs are golden brown and the artichokes are tender.
Serve the stuffed artichokes with lemon wedges for squeezing over the top.
