Mediterranean Stuffed Grape Leaves

Ingredients:

  • 1 jar grape leaves, drained
  • 1 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup chopped sun-dried tomatoes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions:

  1. In a bowl, mix together quinoa, feta cheese, olives, sun-dried tomatoes, parsley, lemon juice, oregano, salt, and pepper.
  2. Carefully remove grape leaves from the jar and rinse under cold water to remove excess brine.
  3. Lay a grape leaf flat on a clean surface, shiny side down. Trim off any tough stems.
  4. Place a spoonful of the quinoa mixture in the center of the grape leaf.
  5. Fold the sides of the leaf over the filling and roll it up tightly.
  6. Repeat with the remaining grape leaves and filling.
  7. Arrange the stuffed grape leaves in a single layer in a baking dish.
  8. Bake in a preheated oven at 350°F (175°C) for 20 minutes, or until heated through.
  9. Serve warm or at room temperature.
