Ingredients:

  • 1 pre-made pie crust
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell peppers, diced
  • 1/2 cup feta cheese, crumbled
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and prick the bottom with a fork.
  3. In a large bowl, whisk together the eggs, milk, oregano, salt, and pepper.
  4. Layer the chopped spinach, cherry tomatoes, bell peppers, and feta cheese in the pie crust.
  5. Pour the egg mixture over the vegetables and cheese.
  6. Bake in the preheated oven for 35-40 minutes, or until the quiche is set and lightly golden on top.
  7. Allow to cool for 10 minutes before slicing and serving.
