Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 1 tablespoon ice water
  • 3 large egg whites
  • 1/2 teaspoon cream of tartar
  • 3/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • Black food coloring gel

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine flour, powdered sugar, and salt. Cut in butter until mixture resembles fine crumbs.
  3. Add egg yolk and ice water, mixing until dough forms a ball. Wrap and chill for 20 minutes.
  4. Roll out dough on a floured surface to 1/8-inch thickness. Cut into circles and press into tart pans.
  5. Bake tart shells for 10-12 minutes until golden. Cool on a wire rack.
  6. In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
  7. Gradually add granulated sugar, beating until stiff peaks form. Stir in vanilla.
  8. Pipe meringue onto cooled tart shells, creating ghost shapes. Add eyes with black food coloring gel.
  9. Bake at 250°F (120°C) for 45 minutes until meringue is firm and dry. Cool completely before serving.
