Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 1 tablespoon ice water
- 3 large egg whites
- 1/2 teaspoon cream of tartar
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- Black food coloring gel
Directions:
- Preheat oven to 350°F (175°C).
- In a bowl, combine flour, powdered sugar, and salt. Cut in butter until mixture resembles fine crumbs.
- Add egg yolk and ice water, mixing until dough forms a ball. Wrap and chill for 20 minutes.
- Roll out dough on a floured surface to 1/8-inch thickness. Cut into circles and press into tart pans.
- Bake tart shells for 10-12 minutes until golden. Cool on a wire rack.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add granulated sugar, beating until stiff peaks form. Stir in vanilla.
- Pipe meringue onto cooled tart shells, creating ghost shapes. Add eyes with black food coloring gel.
- Bake at 250°F (120°C) for 45 minutes until meringue is firm and dry. Cool completely before serving.
