Mint-Crusted Lamb Chops

Ingredients:

• 8 lamb chops
• 1/4 cup fresh mint leaves, chopped
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 1 teaspoon salt
• 1/2 teaspoon black pepper

Directions:

1. Preheat the oven to 400°F (200°C).
2. In a small bowl, mix together the chopped mint, minced garlic, olive oil, salt, and black pepper.
3. Rub the mint mixture over both sides of the lamb chops.
4. Place the lamb chops on a baking sheet lined with parchment paper.
5. Bake in the preheated oven for 20-25 minutes for medium-rare or longer if desired.
6. Remove from the oven and let the lamb chops rest for a few minutes before serving.
