Mom's Strawberry Almond Pie

For The Crust

Ingredients:

  • 1 1/2 cups crushed shortbread cookies
  • 1/4 cup finely chopped almonds
  • 1/3 cup melted butter

Directions:

  1. Preheat the oven to 350 degrees
  2. In a large mixing bowl combine crushed shortbread cookies and almonds
  3. Slowly mix in butter and stir till combined
  4. Spread in the bottom and up the sides of a 9" pie dish
  5. Bake for 8-10 minutes or until golden brown around edges, set aside.

For The Filling

Ingredients:

  • 6 cups whole strawberries, divided
  • 1 cup sugar
  • 1/3 cup water
  • 3 tbsp cornstarch
  • 1/4 salt
  • 1/2 tsp almond extract

Directions:

  1. Clean and hull strawberries.
  2. In a medium sauce pan over medium heat mash 1 cup of the strawberries, sugar, water and cornstarch
  3. Cook stirring constantly until thick, boil for 1 minute.
  4. Remove from heat and stir in almond extract and salt.
  5. Set aside to cool.

To Assemble The Pie

Directions:

  1. Pour the remaining whole strawberries into the baked crust.
  2. Pour the cooled strawberry sauce all over the whole strawberries
  3. Let cool in the fridge for at least 3 hours
  4. Serve with a dollop of whip cream. or sliced almonds on top.
