For The Crust
Ingredients:
- 1 1/2 cups crushed shortbread cookies
- 1/4 cup finely chopped almonds
- 1/3 cup melted butter
Directions:
- Preheat the oven to 350 degrees
- In a large mixing bowl combine crushed shortbread cookies and almonds
- Slowly mix in butter and stir till combined
- Spread in the bottom and up the sides of a 9" pie dish
- Bake for 8-10 minutes or until golden brown around edges, set aside.
For The Filling
Ingredients:
- 6 cups whole strawberries, divided
- 1 cup sugar
- 1/3 cup water
- 3 tbsp cornstarch
- 1/4 salt
- 1/2 tsp almond extract
Directions:
- Clean and hull strawberries.
- In a medium sauce pan over medium heat mash 1 cup of the strawberries, sugar, water and cornstarch
- Cook stirring constantly until thick, boil for 1 minute.
- Remove from heat and stir in almond extract and salt.
- Set aside to cool.
To Assemble The Pie
Directions:
- Pour the remaining whole strawberries into the baked crust.
- Pour the cooled strawberry sauce all over the whole strawberries
- Let cool in the fridge for at least 3 hours
- Serve with a dollop of whip cream. or sliced almonds on top.
