Moroccan Lamb Tagine with Apricots and Almonds

Ingredients:

  • 1.5 lbs lamb, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 1/2 cup dried apricots
  • 1/4 cup slivered almonds
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions:

  1. In a tagine or large pot, heat olive oil over medium heat.
  2. Add the lamb cubes and brown on all sides.
  3. Add the chopped onion and garlic, and sauté until softened.
  4. Stir in the ground cumin, coriander, cinnamon, ginger, turmeric, and cayenne pepper.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the dried apricots and simmer for 1.5 hours or until the lamb is tender.
  7. In a separate pan, toast the slivered almonds until golden brown.
  8. Serve the lamb tagine sprinkled with toasted almonds and fresh cilantro.
