Ingredients:

  • 300g beef (thinly sliced)
  • 4 medium potatoes (peeled and cut into wedges)
  • 2 medium onions (sliced)
  • 3 medium carrots (sliced)
  • 200ml dashi stock
  • 4 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon mirin
  • 1 tablespoon vegetable oil
  • 2 green onions (chopped for garnish)

Directions:

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onions and cook until they become translucent.
  3. Add the beef to the pot and sauté until browned.
  4. Stir in the potatoes and carrots, cooking for a few minutes.
  5. Pour in the dashi stock, soy sauce, sugar, and mirin.
  6. Bring to a boil, then reduce the heat to low and cover the pot.
  7. Simmer for about 20 minutes, or until the vegetables are tender.
  8. Remove from heat and garnish with chopped green onions before serving.
