Nonna's Cacio e Pepe Pasta

Ingredients:

  • 8 oz spaghetti
  • 1/2 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tsp freshly ground black pepper
  • Salt to taste

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
  3. In a large skillet over medium heat, toast the black pepper until fragrant, about 1 minute.
  4. Add 1/2 cup of pasta water to the skillet and bring to a simmer.
  5. Add the cooked spaghetti to the skillet and toss to coat in the pepper-infused water.
  6. Gradually sprinkle in both cheeses, tossing constantly until melted and creamy. Add more pasta water if needed to loosen the sauce.
  7. Season with salt to taste and serve hot.
  8. Garnish with additional cheese and black pepper if desired.
