Nordic Lamb Stew with Root Vegetables

Ingredients:

• 1.5 lbs lamb stew meat, cubed
• 2 tbsp olive oil
• 1 onion, diced
• 3 garlic cloves, minced
• 2 carrots, peeled and sliced
• 2 parsnips, peeled and sliced
• 2 potatoes, peeled and diced
• 4 cups beef broth
• 1 cup red wine
• 2 bay leaves
• 1 tsp dried thyme
• Salt and pepper to taste

Directions:

1. In a large pot, heat olive oil over medium-high heat.
2. Add lamb stew meat and brown on all sides. Remove from pot and set aside.
3. In the same pot, add onions and garlic, sauté until fragrant.
4. Add carrots, parsnips, and potatoes, cook for 5 minutes.
5. Return the lamb to the pot, pour in beef broth and red wine.
6. Add bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 1.5 hours, stirring occasionally.
7. Adjust seasoning if needed and serve hot.
