Ingredients:

  • 2 barramundi fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 1 garlic clove, minced

Directions:

  1. In a small bowl, mix olive oil, sea salt, black pepper, chopped rosemary, parsley, thyme, lemon zest, orange zest, lemon juice, orange juice, and minced garlic to create a marinade.
  2. Place barramundi fillets in a shallow dish and pour the marinade over them, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Remove the fillets from the marinade and let excess drip off. Discard the marinade.
  5. Place the barramundi fillets on the grill, skin-side down, and cook for about 5-7 minutes on each side, or until the fish flakes easily with a fork.
  6. Remove from the grill and let rest for a few minutes before serving.
