Ingredients:
- 4 medium green bell peppers
- 2 medium onions
- 4 medium tomatoes
- 1 cup palm oil
- 1 kg assorted meat (beef, goat, and tripe)
- 2 tablespoons ground crayfish
- 2 tablespoons locust beans
- 1 tablespoon ground pepper
- Salt to taste
- 1 cup chicken broth
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
Directions:
- Blend the green bell peppers, onions, and tomatoes together until smooth.
- In a large pot, heat the palm oil over medium heat until it becomes clear.
- Add the blended mixture to the pot and sauté for about 10 minutes until it reduces and the oil separates.
- Add the assorted meat to the pot, followed by the chicken broth, and stir well.
- Season with ground crayfish, locust beans, ground pepper, garlic, ginger, and salt.
- Cover the pot and let it simmer on low heat for about 45 minutes, stirring occasionally.
- Adjust seasoning as needed and cook for an additional 10 minutes until the stew thickens.
