A rich and flavorful Nigerian stew made with assorted meats and a unique blend of spices, perfect for serving with Ofada rice.

Ingredients:

  • 4 medium green bell peppers
  • 2 medium onions
  • 4 medium tomatoes
  • 1 cup palm oil
  • 1 kg assorted meat (beef, goat, and tripe)
  • 2 tablespoons ground crayfish
  • 2 tablespoons locust beans
  • 1 tablespoon ground pepper
  • Salt to taste
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Directions:

  1. Blend the green bell peppers, onions, and tomatoes together until smooth.
  2. In a large pot, heat the palm oil over medium heat until it becomes clear.
  3. Add the blended mixture to the pot and sauté for about 10 minutes until it reduces and the oil separates.
  4. Add the assorted meat to the pot, followed by the chicken broth, and stir well.
  5. Season with ground crayfish, locust beans, ground pepper, garlic, ginger, and salt.
  6. Cover the pot and let it simmer on low heat for about 45 minutes, stirring occasionally.
  7. Adjust seasoning as needed and cook for an additional 10 minutes until the stew thickens.
