One-Pot Shawarma Chicken & Orzo Skillet

Ingredients:

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Directions:

  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add chicken pieces and cook until browned, about 5-7 minutes.
  3. Add onion and garlic, sauté until fragrant.
  4. Stir in cumin, paprika, turmeric, coriander, and cinnamon.
  5. Add orzo, chicken broth, diced tomatoes with their juices, salt, and pepper.
