Ingredients:

  • 3-4 lbs rump roast
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 cup beef broth
  • 1 cup carrots, chopped
  • 1 cup potatoes, chopped
  • 1 cup onions, quartered

Directions:

  1. Preheat the oven to 325°F (163°C).
  2. In a small bowl, mix together olive oil, salt, black pepper, garlic, rosemary, and thyme.
  3. Rub the mixture all over the rump roast.
  4. Place the roast in a roasting pan and surround it with carrots, potatoes, and onions.
  5. Pour beef broth into the bottom of the pan.
  6. Cover the pan with foil and roast in the preheated oven for 2 hours.
  7. Remove the foil and roast for an additional 30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  8. Remove from the oven and let rest for 15 minutes before slicing.
