Ingredients:
- 3-4 lbs rump roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 cup beef broth
- 1 cup carrots, chopped
- 1 cup potatoes, chopped
- 1 cup onions, quartered
Directions:
- Preheat the oven to 325°F (163°C).
- In a small bowl, mix together olive oil, salt, black pepper, garlic, rosemary, and thyme.
- Rub the mixture all over the rump roast.
- Place the roast in a roasting pan and surround it with carrots, potatoes, and onions.
- Pour beef broth into the bottom of the pan.
- Cover the pan with foil and roast in the preheated oven for 2 hours.
- Remove the foil and roast for an additional 30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove from the oven and let rest for 15 minutes before slicing.
