Ingredients:
- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 ripe kiwis, sliced
Directions:
- Preheat the oven to 250°F (120°C).
- In a clean mixing bowl, beat egg whites on medium speed until soft peaks form, about 3-4 minutes.
- Gradually add granulated sugar, 1 tablespoon at a time, while continuing to beat until the mixture is glossy and stiff peaks form, about 5-7 minutes.
- Gently fold in vinegar and cornstarch with a spatula until combined.
- Line a baking sheet with parchment paper and spoon the meringue mixture into a round shape, creating a slight well in the center.
- Bake for 1 hour, then turn off the oven and let the meringue cool completely inside, about 1 hour.
- In a separate bowl, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Once the meringue is cool, top it with whipped cream and arrange mixed berries and kiwi on top.
- Serve immediately to enjoy the contrast of textures.
