For the Peaches:
Ingredients:
- 2 fresh peaches, peeled, pitted and sliced or 1 can (15 ounce) sliced peaches*
- 1/3 cup brown sugar
- 2 Tablespoons all purpose flour
- 1/8 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 Tablespoon lemon juice
- 1/8 cup water
Directions:
- Preheat oven to 425 degrees F
- Place peaches in an ungreased 1- quart baking dish.
- In a small bowl, combine brown sugar, flour, salt and cinnamon. Stir in lemon juice and water. Pour over the peaches.
- Bake for 10 minutes or until hot.
For the Topping:
Ingredients:
- 3/4 cup all purpose flour
- 3 Tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 Tablespoons cold unsalted butter
- 6 teaspoons milk
Directions:
- Combine flour, sugar, baking powder, salt and butter; cut with fork or pastry blender until crumbly.
- Stir in milk just until moistened. Drop by spoonfuls over hot peaches.
- Bake for 20 to 25 minutes or until golden brown.
- If using canned peaches, drain peaches and reserve the juice. Omit the 1/8 cup of water and use the reserved juice.
