Peaches & Cream Bread Pudding is a warm, comforting dessert that combines the richness of bread pudding with the sweet, juicy flavor of ripe peaches. Soft cubes of bread are soaked in a creamy custard made with eggs, milk, and a touch of vanilla, creating a luscious base that absorbs all the sweet, spiced goodness. Chunks of fresh or canned peaches are folded in, adding bursts of fruity sweetness throughout the dish. Ingredients:
- 8 cups cubed white bread
- 1 can (398 mL) sliced peaches, drained and chopped
- 4 eggs
- 3/4 cup (175 mL) granulated sugar
- 2 cups (500 mL) milk
- 1 cup (250 mL) heavy cream (35%)
- 1 tsp (5 mL) vanilla extract
- 1/2 tsp (2 mL) cinnamon
Directions:
- Preheat the oven to 350°F/180°C.
- Add the bread cubes to a well-greased 9x9 baking dish. Dot the surface with the peaches, snuggling a few down into the bread cubes here and there.
- To make the custard mixture, whisk the eggs with the sugar in a large mixing bowl until lightly frothy. Stir in the milk, cream, vanilla and cinnamon. Pour slowly over the bread cubes. Using the back of a spoon, press any bread cubes that are still dry down into the custard mixture.
- Bake for 45 to 50 minutes until a knife inserted into the centre comes out clean. Serve warm, room temperature or chilled.
