Peaches & Cream Bread Pudding

Ingredients:

  • 8 cups cubed white bread
  • 1 can (398 mL) sliced peaches, drained and chopped
  • 4 eggs
  • 3/4 cup (175 mL) granulated sugar
  • 2 cups (500 mL) milk
  • 1 cup (250 mL) heavy cream (35%)
  • 1 tsp (5 mL) vanilla extract
  • 1/2 tsp (2 mL) cinnamon

Directions:

  1. Preheat the oven to 350°F/180°C.
  2. Add the bread cubes to a well-greased 9x9 baking dish. Dot the surface with the peaches, snuggling a few down into the bread cubes here and there.
  3. To make the custard mixture, whisk the eggs with the sugar in a large mixing bowl until lightly frothy. Stir in the milk, cream, vanilla and cinnamon. Pour slowly over the bread cubes. Using the back of a spoon, press any bread cubes that are still dry down into the custard mixture.
  4. Bake for 45 to 50 minutes until a knife inserted into the centre comes out clean. Serve warm, room temperature or chilled.
