Pecan Pie Cheesecake

Ingredients:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Directions:

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; mix well and press into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream until fully combined.
  5. Pour the cream cheese mixture over the crust.
  6. In another bowl, mix together corn syrup, brown sugar, chopped pecans, cinnamon, and salt.
  7. Pour the pecan mixture over the cheesecake layer.
  8. Bake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove from oven and cool completely before refrigerating for at least 4 hours.
