Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup pecans, chopped
- 1 cup corn syrup
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
Directions:
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter; mix well and press into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat together cream cheese, granulated sugar, and vanilla until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream until fully combined.
- Pour the cream cheese mixture over the crust.
- In another bowl, mix together corn syrup, brown sugar, chopped pecans, cinnamon, and salt.
- Pour the pecan mixture over the cheesecake layer.
- Bake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour.
- Remove from oven and cool completely before refrigerating for at least 4 hours.
