Ingredients:

  • 1 cup pecan halves, toasted
  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

Directions:

  1. Finely chop the toasted pecans and set aside.
  2. In a medium bowl, combine graham cracker crumbs, chopped pecans, brown sugar, melted butter, honey, salt, and vanilla extract. Mix until it forms a sticky dough.
  3. Shape the mixture into small balls, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper and refrigerate for 30 minutes.
  4. While the truffles are chilling, melt the chocolate chips and coconut oil together in a heatproof bowl over a pot of simmering water, stirring until smooth.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off. Return to the parchment-lined sheet.
  6. Refrigerate the chocolate-coated truffles for at least 15 minutes or until the chocolate sets.
